Raw Chocolate Truffles with Almonds & Dates
Gluten-Free, Paleo, Vegan Truffles Recipe!

These fruit-sweetened chocolate truffles will satisfy anyone's chocolate cravings, easy to make in your blender or food processor. They are raw, gluten-free, paleo, vegan, and guilt-free!
The Recipe
Makes 15 truffles
INGREDIENTS
12 dates (if too dry pre-soak in water for 20-30 min, drain well)
2/3 cup organic unsalted almond butter
1/2 cup organic fine almond flour
1/4 teaspoon fine sea salt
4 tablespoons cacao powder
Extra cacao powder in a separate bowl for final rolling
TOOLS
Blender or food processor
Directions
Blend dates in a blender until smooth, scraping down the sides of the blender as necessary.
Add the almond flour, almond butter, cacao powder, and salt.
Blend until completely combined and smooth, using the tamper setting to make sure everything is incorporated and scraping down the sides as necessary.
Use a small cookie scoop or a tablespoon to make tablespoon size truffles. Roll into balls between your hands and lay on a plate.
When all the truffles are formed, roll each ball in cacao powder.
Store in an airtight container in the refrigerator for up to a week or freeze if you made extra.
NOTES
Blend until the mixture is smooth and has no nut or date bits. It’s that silky and creamy texture that makes these truffles so good!
