Spelt Vegan Pancakes

Fluffy, wheat-free pancake recipe!

For folks in recovery, I recommend avoiding white and whole wheat flours (“common” wheat)— not necessarily gluten (unless you’re allergic to gluten).

It’s only the gluten in common wheat that spikes our blood sugar and helps make us fat—not the gluten in whole-grain flours made from rye berries, einkorn, kamut, and spelt. All of those contain gluten, but of a different potency and in much lower amounts. While these ancient grains are relatives of wheat, many people with wheat and gluten sensitivity do not react to them.

This means most of us can still enjoy gluten-y grains and foods that are made with them, like these delicious pancakes that your whole family will love!

The Recipe

Makes about 6-7 large pancakes

INGREDIENTS

DRY

Directions

  • Mix all dry ingredients in one bowl

  • Mix all wet ingredients in the 2nd bowl

  • Combine dry and wet ingredients

  • Fold in blueberries or chocolate chips (optional)

  • Use eco-friendly PFOA free non-stick pan for frying without oil, and make sure it’s hot before starting

  • Enjoy with non-dairy butter, real maple syrup, or non-dairy whipped cream for the kid in you or in your family :)


NOTES

If you don’t want to go all vegan, you can substitute 1 tablespoon of vinegar and 1 tablespoon of baking powder for 1 egg
