My Favorite Homemade Dressing
The Best “Green Goddess” Dressing Recipe
Fresh greens don’t need much to make them sing. Free them from those smothering robes of store-bought glop, and let them breathe in light new dressing you make yourself.
This zesty recipe can be mixed together as you prepare a meal, or made ahead of time and stored in the fridge for up to a week. Plus, its variations are limited only by your penchant for experimentation: try peppier or milder versions, more or less liquid, etc, and see what makes you sing.
The Recipe
4 Servings
INGREDIENTS
1 cup (loosely packed) torn or chopped basil leaves, cilantro, or parsley
1/2 cup extra virgin olive oil
3/4 cup raw apple cider vinegar
1 teaspoon - 1 tablespoon maple syrup or raw honey
1 - 2 garlic cloves, finely chopped or put through a garlic press
Sea salt and ground pepper to taste

Glass Container with a Lid
Directions
Combine all ingredients in a glass jar with a tight-fitting lid
Chill until ready to use
Shake well before dressing your greens lightly
NOTES
The only way to truly make this homemade dressing your favorite is to try making it different ways. I like to vary it by adding 1 tablespoon Dijon mustard, 2 tablespoons lemon juice, or 1 teaspoon finely chopped shallots or red onion.
Through thick and thin... Add a little water if the dressing is too thick for your taste. If you’d like it thicker, cut back on the vinegar next time.
