My Favorite Homemade Dressing

The Best “Green Goddess” Dressing Recipe

Fresh greens don’t need much to make them sing. Free them from those smothering robes of store-bought glop, and let them breathe in light new dressing you make yourself.

This zesty recipe can be mixed together as you prepare a meal, or made ahead of time and stored in the fridge for up to a week. Plus, its variations are limited only by your penchant for experimentation: try peppier or milder versions, more or less liquid, etc, and see what makes you sing.

The Recipe

4 Servings

INGREDIENTS

  • 1 cup (loosely packed) torn or chopped basil leaves, cilantro, or parsley

  • 1/2 cup extra virgin olive oil

  • 3/4 cup raw apple cider vinegar

  • 1 teaspoon - 1 tablespoon maple syrup or raw honey

  • 1 - 2 garlic cloves, finely chopped or put through a garlic press

  • Sea salt and ground pepper to taste

Glass Container with a Lid


Directions

  • Combine all ingredients in a glass jar with a tight-fitting lid

  • Chill until ready to use

  • Shake well before dressing your greens lightly


NOTES

The only way to truly make this homemade dressing your favorite is to try making it different ways. I like to vary it by adding 1 tablespoon Dijon mustard, 2 tablespoons lemon juice, or 1 teaspoon finely chopped shallots or red onion.

Through thick and thin... Add a little water if the dressing is too thick for your taste. If you’d like it thicker, cut back on the vinegar next time.
